My husband eats two bananas a day. Every day. Without fail. Sometimes my kids also eat lots of bananas. However, as soon as I increase the banana supply entering my house, the kids declare allegiance to apples, and my husband gets a cold.
Banana Bread to the rescue! I often make two or three loaves at a time. I keep one loaf on the counter to enjoy over the next few days and freeze the remaining loaves for a day when I need breakfast, or company is coming over.
Never store it in the refrigerator. A refrigerator circulates cool air, which removes moisture and can prematurely dry breads and cakes. Place your cooled loaf on a plate and cover it in plastic wrap, or store it in an airtight container. Store it for up to four days on your counter.
Banana bread can keep for up to four days on your counter before you begin to notice changes in texture. When day five or six rolls around, the bread will begin to dry out, but it will still be fine to eat. Pop a slice in the toaster, and you will never know the difference. You can freeze slices, half loaves, or whole loaves.
I prefer to wrap loaves and slices in foil, place them in a zip-top bag, remove as much air as I can, then freeze for up to four months. I find that this is enough to keep freezer burn away. If you leave it to cool in the tin you will end up with condensation at the bottom of the cake, and the bottom will go soggy. Depending on your household, you can freeze a whole or half cake, or you may prefer to slice the cake and wrap the slices individually.
Either way, you need to ensure the cake is well protected, so wrap it in cling film and put the cake in a freezer bag, labelled with the contents and the date. It should keep for a few months in the freezer. The banana loaf cake should defrost at room temperature in a few hours.
It will take about two hours for bananas to defrost at room temperature, or a few minutes in the microwave. On the counter: Place bananas on a counter in a bowl or on a plate. In the microwave: You can microwave your bananas on low for three to four minutes, or on the defrost setting. Use a bowl or plate to catch liquids that may run off. In a bag: If you froze bananas in a bag, you can defrost them there, too. You can submerge the bag of bananas in a bowl of warm water for about 10 minutes. It may help to put bananas in a colander to drain excess liquid.
