I only marinated the chicken for about 30 minutes and I didn't think it absorbed much flavor from the marinade so next time I would leave it in a little longer.
I added a touch of honey to the dressing to take the edge of f of the acidity. The salad with the chicken was the perfect bite. I loved the punch of citrus with the bitter arugula. This was very good. It had really great flavor. I do suggest that if you don't like really citrus tasting chicken than to keep the salad separate from the chicken.

If your lemon is quite tart don't be afraid to add a very little sugar to the dressing. We enjoyed this dinner! I changed it up a bit by using boneless skinless chicken thighs - very succulent! I live in an apartment so I couldn't grill I love this recipe because it is packed with lean protein. It's so simple to make and makes plain chicken breasts feel like they're from a fancy French bistro.
Place pounded chicken on a large plate or platter and repeat with the remaining chicken breasts. Drizzle the chicken with 1 tablespoon of the olive oil, turning to coat the breasts on both sides, then sprinkle the chicken on all sides with 1 teaspoon of the salt. Heat a gas or charcoal grill over medium-high heat you can use the below process in a skillet if no grill is available. Use tongs and a dishtowel or paper towel dipped in olive oil to lightly grease the grill.

Would you recommend broiling or roasting the pounded marinated chicken? I would probably put the chicken on a rack in the pan with either cooking method. Soooo, I had to improvise.
I put them on a broiler pan and broiled them for a few minutes on both sides about 5 inches from the heat. Do not roast this chicken. It will not brown, but instead it will poach in the oven. Let me know if you have any other questions. I broiled as you did at your sister-in- laws house. I did Lo the first 5 minutes and then flipped and placed back on Hi for the remaining 5 minutes.
